I've been thinking about trying out anime. I've had no prior experience with it besides Fist of the North Star, so what would you recommend I watch first?

Right. Obviously I'd have to recommend
Fullmetal Alchemist. I have my problems with it, but it's the definitive gateway series and a multi-award winning one at that for a reason. Nice humane adventure story with a very well developed world.

Gintama is considered THE pinnacle of comedy anime. It has a very unique, and disarmingly well developed setting, well cut characters and an almost acerbic fast wit that cracks through you and makes you laugh all the way through.
Shin Sekai Yori is my favourite show of last year. Based on an award winning series of novels, it's science fiction about five children a thousand years after the destruction of human civilization and their attempts to learn and come to terms with humanity's dark past.
Fate/Zero is an urban fantasy story of heroism and sacrifice. A prequel to the beloved VN Fate/Stay Night (Reading/watching that isn't necessary). It has a developed mythology, a strong cast of male characters and beautiful art and music.
Zetsuan no Tempest is a
pretty fucking gay adventure series which runs madly off Shakespearean theatrics and time travel drama. I went in with low expectations and left with lots of praise. The main cast are four of the most well defined characters I've seen in any media and the director really knows how to do good melodrama.
HunterxHunter is the epic and endlessly imaginative series that Naruto and Bleach really wanted to be. I erred on the side of caution with it for nearly two years, but finally relented and caught up in just under a week. There really isn't enough good things I can say about this series. It has so much energy and love in it, it's so bright and extravagantly inspired. The only bad thing I can say about ist is the week long wait for the next episode is an increasingly torturous lesson in suffering.
Saki is a big gay all female sports show. It's much better than it has any right to be, with a large cast of characters you can't help but fall in love with. You like ponies so I can't imagine you not liking this.
