It's just an age-old image painted on the rock by Mudokons. I wouldn't try to find too much meaning in it, if I were you. It's probably just something put in to look quite nice. I do realise that many of these painted images contribute to the ease of the game (a rock painting of a Mudokon leading an Elum can tell you that a platform is coming up), but seeing as there's nothing in Abe's Oddysee to do with such a 'creature', I can only suggest that it's purely aesthetic.
Then again, being open minded, how about this:
Elums are very friendly creatures, as we all know, but are scared by anything they don't understand - Abe's chanting or the spirit rings for example. When the Mudokons that lived in Paramonia were being captured by the Glukkons and Vykkers, all those years back, they didn't understand what was going on. They represented these spectres, which could appear and disappear seemingly at will (through what we know as teleporters, or perhaps other fast forms of transport), as ghosts, and also displayed an Elum to show that they were as frightened as an Elum would be at a ghost.
On another hand, if someone has discovered a Mudombie in Abe's Oddysee, please enlighten us.
