It could be likely considering that the XDKs (Xbox Development Kits) are actually PCs with specialized software that allows them to simulate Xbox games.
Also, I did read somewhere that developing for the Xbox uses a similar chipset to developing for a PC game. I think it was way back before the Xbox announcement when Lorne was saying how easy it would be to port a PC version to Xbox compared to the PSX version.
However, regarding a demo, it would be awesome to play Munch again. And if there was a PC demo, you'd need a very good machine to run it.
But then again the Xbox isn't too far off. If the Xbox was out already, you'd probably see a magazine style demo like you get for PSX/PS2 games.
