The problem with co-op/leaderboards is the same as with easter eggs. It would break the immersion in an identical way.

how can you have immersion when you're not actually playing the game? Something can't break immersion when it's held separately from the game experience itself.
An easter egg is in game, and if done wrong has the potential to damage your experience and ruin your suspension of disbelief. A leader board or different game mode can't and won't because they won't been seen in the game itself, only via a menu option.
