Tip 1: Add bits of iceburg lettuce to whatever food you have. It tastes nice and is a great way of filling your plate without making your plate full of unhealthy food.

Iceburg lettuce, while tasty, doesn't go with everything and isn't that nutritious. It certainly won't balance out fatty foods if you have it with them. The idea is to not eat things that are bad for you in the first place.
But I can talk, I still eat lots of crap (quiche, pasties, pasta, lots of bread and fried meals) even though I also eat lots of fruit and veg. I cycle about 20 miles every week (not by choice) and cut firewood each evening, and I'm still about 4 KG overweight. So the fruit and veg I eat definitely doesn't balance out the crap.
