You can, obviously, see the birds more clearly in the movies. In the movies they appear to be swallow-based, while during the game they appear to be dove or pigeon-based.

Why do you asume that swallows and doves etc. would be extremely unlikely to evolve on Oddworld? A fair enough statement, but there are, after all, bees and bats on Oddworld. Not to mention cockroaches. And fireflies.
No, bats aren't a type of bird. Bats are mammals, which mean they have hair, milky glands and are warm-blooded among other things. Birds don't have hair, they have feathers (mostly), and they lay eggs instead of live animals.
