Every step the Glukkons take seems to be more and more disrespectful to the Mudokons and their beliefs... first making them slaves, then planning to turn them into foodstuff, then digging up the bones of their ancestors to make into a drink... since the moon is the one thing the Mudokons can always look to as a reminder of their past, while the Glukkons attempt to destroy any other remainders of their culture, exploiting the moon would be the next obvious thing for them to do. Of course there would have to be a reason, the Glukkons wouldn't go there unless there was a chance of economical gain, but there could be untapped resources held up there. There's no need to believe it's a barren lump of rock like our moon. The Oddworld moon is an important spiritual symbol, but since as the games get more complex it's likely they'll explore that side of things in more detail, visiting the source of that spiritualism might make for an interesting story and explain a little more about Mudokon history.
