Okay, well, seeing as there's a bit of mystery for some dudes and dudettes around here eminating from a couple of these critters, I'll take the time to (not reluctantly) tell you a bit.
Stangs were mentioned in the Oddworld Production Team Presentation. I forget what its real name is, but I saved it on my computer, and I'll edit this message for you later when I've found it. They were simply described as being an underwater creature designed as an 'enemy' for the water-borne Munch.
Kintos are mountainous creatures that do not like anything to be above their heads - and so the Glukkons enslaved them, put them under ceilings and made them carry heavy stuff on their heads. There's a production picture in one of Paul O'Conner's designer diaries at Gamespot.com/Videogames.com.
Scoots are squid-like fish that are also called 'Worry Fish' (heh - my alternative nickname, used in OddChat) because of the constant look of worry on their faces - they are worried because they're most likely about to get eaten by a Gabbit or Sea Rex or Stang.
It was actually Xavier who drew my attention to the Skeeter in the topic 'What are Skeeters and StingRings' or something similar, and again in that other thing with the things (oh dear, if only I could remember. I'm fourteen, and I'm falling apart mentally and physically).
