Paul has created an
Abes Oddysee and Exoddus PC sprite/background extractor for use with custom AO/AE levels. All of the backgrounds and sprites can be ripped using this. I remember one time having all the bg files on my old laptop but unfortunately they've been lost to time and built-in obsolescence. But it's your best bet, I'd say.
