I believe the symbol represents the RuptureFarms factory design we see in New n Tasty, with the spikes around and within it representing flames. As this is the resistance group's logo, and from what I've read on the forums on one thread, that the resistance might be made up of Mudokons freed from RuptureFarms or inspired by the breakout/rebellion, this logo then represents a failed Glukkon business, meant to stand-in for all Glukkon businesses, with the flames around it representing the destructive power the Mudokons within and without can have on them.
