Press F9 (or whatever you've bound your key to) to start and stop recordings. It'll save large, large raw avi files into a folder that you've specified that you'll want to process with a video editor before uploading them.
Be sure that the "Record Win 7 sound" and "Record external input" are checked under the Movies tab if you want to record sounds, voices and your voice with the video. Be sure Minecraft's sound is turned down or turned off, though.
