PASSIVE MOBS ARE FINITE: As I said in the Minecraft topic, passive mobs spawn with newly-explored chunks and will no longer re-spawn after being killed, with the exception of chickens, I think. This will be fixed in 1.9 with passive mob breeding. So be VERY careful what you kill when you reach our new settlement.
Seems 1.8 is a bit broken in that regard (especially since only 3 strongholds can be spawned per map - Something that will change to infinite in 1.9). It seems snow biomes no longer exist. I suggest that we make a new world when 1.9 comes and move all our stuff to it using WorldEdit or MC Edit or something, setting Exoddus as our new spawn and have the main areas of the 1.7 Genesis world placed somewhere not too far away (with the exception of the old wilderness).
