I just found it cooler to speed past 2 redstone torches at night than it was to have them on just one side of a track - Plus they stand out more as a landmark from a distance. Not that it's too important though.

Mobs rarely spawn on gravel and it's easy to obtain and remove - Stone and wood are both tedious to obtain and when I used dirt, animals ended spawning on my skyrail. Gravel is more subtle than sand, especially when it's in the sky cutting across my map, plus traintracks are normally on gravel IRL so I think it makes sense.

Here's an even simpler powered track - But it's not bi-directional and doesn't go as fast as mine:
