I know how they are usually done: Some of the bits that look attatched are in fact perfectly aligned so they appear to touch form the angle the camera is at. Also, careful lighting can make flat surfaces appear to be inclined and and vice versa. For more information, look at these:

Oh yeah, I'm totally aware of how these sorts of illusions normally work. The thing that throws me is how he manages to make the water part of the illusion as well - not only did he figure out how to use camera angles on the structure, he also got the water to look like it was flowing uphill and pouring back to the start.
