Garry's Mod. So far my favorite things are:
Spawning large numbers of barrels, roping them together and blowing them up
A two-metre stretch of wire railing with rocket thrusters
A shipping container on circular-saw wheels, which creates a cloud of 'LOL's as it rumbles along.
It's like the world's most violent / ridiculous set of Lego.

I can't express how much I love this game, that the only thing that can limit you is your imagination.
Things I have built in this game:
Remote controlled car
Catapult
Aeroplane
A zoo
A fully automated house (doors, defense systems, etc.)
And a few more things not worthy of note.
