I suck at Super Punch-Out. How can I get past the last boss in the first set?

Seems off-topic, but if you mean Minor Circuit, basically if you want to beat him without risking too much, don't counter (except on one part). If you want to beat him fast, counter everything you can.
Either way, there is the infamous Bull Charge. You need to time it correctly, and hit him in the gut as he comes toward you. If you do it correctly, he will go down, regardless of his stamina. But it's the same to you if you get hit by it.
By the way, whenever he spins around the area, he is dizzy. Hit him at the right time and he will go down regardless of his stamina. He can't hurt you if he's dizzy (how can he, anyway?). If you mistime it, but still hit him, he will be stunned.
