But I can't understand why Lorne designed all these things about Oddworld and we won't see everything but we will only know that they exist.

I think all the extra stuff gives Oddworld deapth. If there were just the things we see in the games it would be a bit flat.

It would be awesome if Oddworld released some graphic novels surrounding their universe. Those things are a lot less expensive to produce than a video game, and can tell amazing stories with the use of pretty pictures.
