Wasn't there a description somewhere that said they hated their jobs, but that they were nearly immortal (500yrs I think) and had to put up with all of Sam's mood swings and such?

That used to be on Oddworld.com, in the Universe section. It contained information specific to the Shrink that takes care of Sam. It hates its job and longs for freedom. It hates Sam, but also identifies with her.

I think in Mudokon "colonies" the workers are gender neutral, but we refer to them as male because they resemble human males.

Male refers to a person's sex, not their gender. Prior to SW all the characters we'd seen were men by human gender standards. They were just sexless.
