I'm not sure if this is the way she did it but it's faily simple to cut thing out smoothly.

]All you have to do is roughly go over the figure/object with the magnetic lasso. Then afterwards zoom into about 800% and carefully go round the object, adding and subtracting from the selection with the normal lasso tool.[/Photoshop speak]
