Abe's Exoddus by far. AO did a good job of introducing the world and overall feel of Oddworld, but AE really expanded on that. It showed how large Oddworld actually was, and that it's an active world beyond the characters on screen. It gave more personality to the industrialists and showed more of the mystical aspect of the natives. The gameplay itself added plenty of new challenges yet remained slow paced enough to allow you to fully take in the amazing scenery of each screen. All of the games were amazing, but Abe's Exoddus is what really let me know what Oddworld was all about.
