Well, Gabbits do breed at the source of the River Mongo every year, so it's not like they never enter Western Mudos. It's not known whether they cope very well on the land in the desert, though. As you suggest, it wouldn't be the safest place fo them, given their abilities.
That said, Gabbits must have evolved amphibeously for a reason. What do Gabbits do on land?

The same things frogs do on land... I don't know what.
But don't forget that back when the Gabbits bred regularly at Ma'Spa, Western Mudos wouldn't have been a desert yet as the river had not yet been dammed.
