I'd love for my body to be frozen solid in a huge coffin-shaped block of ice and shot out of an airlock into the infinity of the cosmos.

But realistically... I think the whole ashes thing would be the best way to go. Since we don't yet have the means to totally blast apart a body into its component atoms (to my knowledge), I guess ashes are the next best thing. I like the idea of my physical body contributing to the growth of myriad tiny living things and being disseminated over time throughout the world. I suppose I would have my ashes scattered over the Olympic rain forest or something.

The whole side-by-side his and her burial plots/crypts/whatever idea sounds nice, too. I doubt I'm destined for that, though.
