I'm not sure entirely, but I think it might be just that: a sausage getting cut in half.
This might indicate that it is part of a meat grinding machine.
But then again, since it is positioned over a door later that same level, it might be a design that simply shows Abe where to stand to accomplish something. Like in that secret area, that area of the screen is a good place for Abe to stand when talking the mudokons down to the next screen, and later, it points out a door Abe must walk through.
