My theory: A break-up in communication between Mr. Lanning and the game sprites creators caused the sprite creators to make them all blue, instead of dimorphing their color.
Honestly, I don't think it has anything to do with Mudokons having pigment problems, or them being sad.
It was most likely a technical problem in AO, just like the four fingers in AO and the three in AE. Nobody on Oddworld went around chopping off the Mud's pinkies and said, "Here you go, that's your new look for the sequel." No, Japan had that STUPID problem with 4 fingered heroes, and so a finger was removed due to legal reasons.
Also, I think that the reason the Mudokons changed color in the game was simply to give the player more of a hint that told them, "Hey, he's red. He must be angry." I don't think that Muds change color naturally. Why? Because they would have shown it in the Cinematics by now. Abe/Alf have gotten angry plenty of times. And we've seen drunk Mudokons in AE already. And that blind guy was green, too.
I think it's all about helping us understand the gameplay. Like, maybe some of us can't hear the Mudokon going "Rrrrr!", but we sure as hell can see him turning red. It doesn't happen on Oddworld, it's just for the gameplay, a signal to tell us what they're feeling and how we should react.
That's my many absurd theories. Take 'em or leave 'em. Me, I have a report to do on the hystory of paleontology.
