http://www.gamespot.com/features/btg/. There's lots of stories about the process companies go through to design games and why they go late (and why usually they're better off for it). There is a great one on Black & White, which is another game that was majorly late.
On the other hand, how can O4 be late when we have never ever been given a date more concrete that "sometime in 2004"? And that is still on the oddworld.com FAQ page so it probably still counts.
