mudokons evolved from Oddworldian birds, its a well known information nowadays. It was said many times by Lorne Lanning and other folks from Oddworld Inhabitants.
This descendence explains why mudokons have feathers, a beak and use birds to open portals.

gizzard is a muscular pouch full of little rocks that birds have behind their stomachs. This organ is used to aid in the breakdown of seeds and solid food before digestion.
That's why we often see birds beaking the ground apparentely eating something. actually they are swallowing small stones to be stored in the gizzard.
