Assignments because I feel that is more closer to what the real world is like. I mean if you get a professional career like being an conceptual artist they will not put out an exam based on that. You go to work basically to do assignments. The test is the assignments. Thats where I balieve the true learning comes to play. I don't like tests not only because they suck but they are completely pointless. And if I was an instructor I would not have a test to base your grade on. I would base my grade on how well you perform your assignments because just that alone will make me judge on how good you are at the given materal. There is no need for testing. And besides in the real world your not going to be put at a table with what 1 hour to squeeze information that you learned over the past year without any reference materal to rely on. If you are in such a situation then there is no problem because you would have all the reference materal you need to fulfill the task. Like I say testing is pointless.
