Might it be something to do with the fact that this is a computer game? Abe isn't
really Immortal, the birds are just the game's cool way of restarting you from the last save point. Think about it: If Abe was actually coming back to life, why would everything he'd killed since the last save point also come back to life?
You might as well ask "How come the game is 2D, when the FMVs are 3D?"...
