Uh, I don't remember what the thumbs mean, but didn't the guy who stole their cart have some missing fingers? That was because he was kicked out of the cannibal settlements or something, right?

Close. The guy who stole the cart had missing thumbs as did
the 'good guy' who saves the son at the end. The missing thumbs were a punishment and permanent mark to show banishment from settlements/communes. Not Cannibal settlements. Why kick someone out of a cannibal settlement? That's just wasting meat.
